Should you toss a salad? Yes? No? Sometimes… but not this time. We were careful to leave the crisp vegetables a bit larger in this appetizing and nutritious salad. Resisting the temptation to stir it all up will allow the vegetables’ individual flavours to stand on their own and give guests the freedom to choose morsels from the different layers, in any order they want. The selection and amount of fresh herbs added will change the salad’s look and flavour every time.

Preparation : 20 minutes

1. Make the vinaigrette.

2. Cover the bottom of a large serving dish with the mixed greens. Drizzle some vinaigrette over the greens.

3. Top the greens with the tomato, cucumber and avocado slices, alternating them as you go, and drizzle some vinaigrette on top

4. Sprinkle with cheese, green onions, sprouts, fresh herbs and prosciutto bits, ending with the fleur de sel.

5. Serve.
