vegan burgers: lentil patties on pita
This gluten-free patty will win over even the most die-hard carnivores, especially if they’re willing to swap a burger bun for a pita bread. Since the patties are fat free, they’re a bit fragile. A pita holds them perfectly. Add green apple, mint and sriracha sauce, and you get fireworks!

1. In a small bowl, combine the mayonnaise with the yogurt, sriracha and salt. Cover and chill.

1. Using a food processor, whirl 2 cups (500 ml) lentils with the green onions, cilantro, oats, lemon juice and garlic. Transfer mixture to a large bowl and stir in the remaining 1 cup (250 ml) lentils. Add salt and pepper; cover and chill for at least 1 hour.
2. Using a 1/3-cup (80 ml) or 1/2-cup (125 ml) ice cream scoop, form patties of the desired size. In a large frying pan, heat oil and cook 2 or 3 patties until golden brown, about 3 minutes on each side. Flip them gently as they are somewhat fragile. Fill each pita with 1 or 2 patties, top with sriracha sauce and add the toppings of your choice.
