jarred protein salad

This salad is a delicious way to boost your intake of cruciferous vegetables (red cabbage and kale in this case). Add a small handful of Northern shrimp or poached trout, along with a hard-boiled egg. It’s so good! It’s the perfect pick-me-up after a workout!

1. In a 4-cup (1 L) glass jar, layer all the ingredients in the order listed. Serve with a creamy salad dressing or the Tamari Vinaigrette in Notebook No. 02.
