Crisp bacon, aged cheddar and wild mushrooms: the perfect trifecta for a late breakfast or to break up a lingering card game. A grilled cheese sandwich is as delicious and easy to make as an omelette or pasta, and it comes in (almost) endless variations.

Preparation : 10 minutes

Baking : 10 minutes

Efficiency : 1 sandwich

Instructions

1. Heat the oil in a large frying pan over high heat. Add the mushrooms and sauté until golden. Season with salt and pepper. Mix in parsley and set aside.

2. Brush one side of each bread slice with the oil. Turn bread slices over (oiled sides facing down) and top both slices with the cheese.

3. Cover cheese with the reserved mushrooms, the bacon slices and arugula, then close the sandwich.

4. In a medium frying pan over medium-high heat, cook the sandwich on each side until the bread is crispy and golden, and the cheese is melted.
