For this meatless variation, the spices must combine white pepper, cinnamon, ginger, cloves and nutmeg. Make sure that the list of ingredients on the packaging contains only these spices. If you can’t find any of the spices, replace the mixture with allspice, to which you will add 1/8 tsp. ground ginger.

1. Rinse lentils thoroughly and put them in a pot with the water, onion and salt. Bring to a boil and let simmer on low heat, uncovered, for 30 to 40 minutes, stirring every now and again.
2. Add the oats and spices. Mix well and continue cooking for around 5 minutes. Pour the cretons into one or more little containers and leave to cool at room temperature. This dish keeps in the refrigerator for around 2 weeks and freezes well.
