belgian endive salad

If we believe the Belgian legend, endives were discovered by a peasant who hid his chicory harvest in a dark cellar in a Brussels village, in a bid to avoid paying taxes on it. Thank you, friend! I’ll never tire of endive’s perfect union with walnuts, blue cheese and a few scattered mint leaves. Oh, you robust yet slimming and antioxidant vegetable, how I love you!

Preparation : 15 minutes

1. In a small bowl, whisk together the oil, vinegar and honey. Add salt and pepper; set aside.

1. In a large serving dish, arrange the endive leaves, then sprinkle with the cheese, celery leaves, walnuts, pecans and fresh herbs. Drizzle with vinaigrette and serve.
